The Ultimate Chicken and Mayo Sandwich


2 chicken breast fillets
3 tbsp mayonnaise
Zest of 1 small lime
4 tsp lime juice
1 small carrot, grated
Mozarella Cheese, grated
Salt and Pepper

Place the chicken breasts, season with salt and pepper, in a thick based pan, on high heat, cover them with just enough water. As soon as the chicken starts to turn a little white reduce the heat to the lowest setting. Cover and simmer for 10-15 minutes, depending on the thickness of your chicken breasts. Place chicken breasts on a chopping board or plate and use two forks to shred them. Mix the other ingredients, except the cheese, together. Mix in the shredded chicken. Add more salt and pepper if required. Spread on some bread. Top up with grated mozzarella. Spread some butter on the sandwiches and toast in a pan on medium heat until golden brown.
