DESCRIPTION
These simple yet flavorful chicken tacos are easy to make and filled with super juicy and delicious chicken! Perfect for weeknight meals and makes great leftovers! These delightfuls are not afraid to put themselves in the running for top taco. Most likely they’ll be quite different than the tacos you grew up with, and that’s a good thing!
INGREDIENTS
The Main
• 1 tbsp. extra-virgin olive oil
• 4 boneless skinless chicken breasts, cut into 1" strips
• Kosher salt, Freshly ground black pepper
• 2 tsp. chili powder, 2 tsp. cumin
• 1/2 tsp. garlic powder
• 1/4 tsp. paprika, 1/4 tsp. cayenne
• 8 corn tortillas, warmed
For Toppings
• Thinly sliced red onion
• Diced tomato
• Shredded Monterey jack
• Diced avocado
• Fresh cilantro
• Lime wedges
METHOD
For Cooking
In a large skillet over medium heat, heat oil. Season chicken with salt and pepper and add to skillet. Cook until golden, 6 minutes. Add spices and stir until coated, 3 minutes more.
For Building
In tortillas, layer chicken and desired toppings.
Serve with lime wedges.
